My son, Ezra turned 3 last week and we had a small little celebration at home for him with presents and cake. I had a lot of you ask what recipe I used, so I thought it would be easiest to put it in a blog post.
My son is obsessed with garbage trucks right now, so of course this cake had to include a garbage truck and then we added gluten-free oreo crumbs for the dirt! The cake is made with *fairly clean* ingredients, it’s gluten-free, and dye-free. I wouldn’t say the oreos are exactly clean… but hey, it’s a birthday cake. We are going for fun and yummy more than healthy when it comes to birthdays.
For the cake, I used King Arthur Gluten-Free flour which is my favorite flour to use for baking! I sub it into recipes all the time instead of regular flour and it almost always turns out so well. A few notes:
+ I made 2 layers for the cake and I wish I would have cut those in half to make 4 layers. Being gluten-free, the cake was a tad dry- it was still really yummy but I think having more frosting on the layers would have made it even more yummy!
+ the consistency of this cake is definitely easier to frost when frozen. I recommend making the cake the night before and then freezing it once it cools. It will make it easier to cut into layers and frost.
+ The frosting is literally SO yummy and would make a good frosting for cookies too! I definitely doubled the recipe to have extra.
