I’ve had a lot of requests to get this cookie recipe up in a blog and I am finally getting around to it
… such is life with 4 kids haha.
These cookies are gluten free and refined sugar free and they are SO good! The recipe yields about 40 cookies so I love making them for events and I always get compliments on them- they don’t even have that gluten-free taste!
I make these pretty regularly because it’s so much cheaper to make your own than buy gluten-free cookies from the start. And these are much softer and more delicious anyway.
A few notes:
• you CAN make it with brown sugar instead of maple syrup. I’ve done both and they both taste great.
• I’ve tried making them by putting the dough into big balls and flattening them and putting them into small balls and not flattening.
I prefer doing small balls- it yields more cookies and they turn out softer.
I think that’s it! I hope you enjoy these cookies as much as we do!
